Diamond Post Medal for All Time! 1,298 Posts Make these refreshing, healthy rolls as an appetizer or light snack. These rolls can be served as is, or with your choice of sauce. The sauce I used is a store bought peanut sauce. I added teaspoon of chili garlic sauce for a little heat.

Ingredients:
- 1/2 cabbage
- 2 golden beets
- 2 eggs
- spring roll rice wrapper
- chives
- mint
- cilantro
- choice of dipping sauce
Steps:
- Wash vegetables, then chop cabbage and golden beets.
- Over medium high heat, cook egg omelet for about 2-3 minutes. Once eggs cooled down a little, slice into smaller pieces.
- Dip rice wrapper in hot water and begin to put your desired stuffing: eggs, cabbage, beets, cilantro, mint and chives.
- Roll up and ready to eat or dip in your choice of sauce.
