Yield: 4-6 people
Ingredients:
- 2 lb yams (Khoai Mo)
- 10 16/20 shrimp
- 2 stems green onions
- 1 Tbsp olive oil
- black pepper
- salt
- 1 Tbsp fish sauce
- 3 cloves garlic
- 1/2 water
Steps:
- Cut the yam in half. Using a spoon, scrape the yam flesh into a bowl. Repeat for all yams.
- Chop garlic and green onions (you will only need a handful of green onions for the minced shrimp; the rest will be for garnishing after cooking).
- Then mince shrimp to a paste. Add some green onions and dash of salt and black pepper.
- Over medium high heat, add olive oil and minced garlic. Sauté garlic until brown.
- Add water.
- When the water boils, slowly add scoop some shrimp into the water to make the shrimp ball/pellet. This will take less than 5 minutes to cook.
- Then the water will boil again, and you add the yam and cook for 5 additional minutes. Add fish sauce stir, turn off the heat and cover the lid for a few minutes. Then scoop into bowls to serve and garnish with green onion.
