So 'Lexi' is an American Bulldog X Rhodesian Ridgeback X Bullmastiff. People refer to her as a Pit Bull and that really doesn't bother me because she's the most loving placid dog you'll find, but out of curiosity could you class her as a Pit Bull?

Only a vet can give you an accurate answer. Looks can be deceiving.
Mixed breeds can look like different breeds when they are young and truthfully going by what someone tells you (unless you know for sure) can also be tricky.

We have a pit bull and lab mix and while the lab mix might have some pit in her, she has been considered a pit bull by some. It seems to be a catch all. Looking at your dog, my first thought wouldn't be pit bull. She looks pretty large and tall. Not compact enough. Doesn't have face shape you expect from a pit bull. I wouldn't say pitbull first and foremost.
However, if you are planning on moving to an apartment or city that bans pitbulls, they may just take one look at your dog and say, "pitbull," and you would have to abide by that decision, unfortunately. If you are planning to do this, it may be worth getting a DNA test to check if she is less than 50 percent pitbull. This might give you some legal recourse.
