I would make a casserole and serve it over the potatoes.
We have made something similar like a lasagna where you cut the parboiled potato into thin slices, layer the bottom of a casserole dish or lasagna pan, then layer up the (already cooked either baked or boiled and shredded) chicken, (par boiled) veggie, cold but already made sauce. Keep layering potatoes, chicken, veggie, sauce until you have run out of each.
If you really want to go hog wild (pun intended) you can crumble already cooked bacon on top. As Rachel Ray would say...YUMMMO!
