I have these all over my garden, most of it is growing where I planted my peppers. I am just not sure what it is as there are no peppers or anything growing on it.

From what I can see it is an Amaranth, but I don't know what species. It is a big family of plants. It is one of the most common weeds, especially in new gardens. It will take over and crowd out other plants. When it's small you can cook it like spinach greens, but it's too old for that now. You'll need pull it out by the roots to keep it from regrowing.
