This recipe makes the best sandwich bread! It's made with a combination of wheat germ, whole wheat, and all-purpose flour. The blend of flours create a soft texture for easy slicing.

Ingredients:
- 1 Tbsp active dry yeast
- 2 cups warm water
- 2 tsp salt
- 2 Tbsp oil
- 1/4 cup honey (corn syrup is a good substitute)
- 1 cup wheat germ
- 1/2 cup whole wheat flour
- 3 1/2 to 4 cup unbleached, all-purpose flour
Steps:
- Combine yeast and 1/2 cup or the warm water in a large bowl, stirring until yeast is dissolved. Set aside 5 minutes.
- Dissolve the salt, oil, and honey (or corn syrup) in the remaining water. Add the liquid to the yeast base and then mix in the wheat germ. Set aside for 5 minutes to soften.
- Gradually add in the whole wheat flour and about 2 1/2 cups of the all purpose flour, beating well for another 5 minutes.
- Turn out the sticky dough onto a floured surface. Knead for 8 to 10 minutes, adding just enough flour to prevent stickiness as you knead. When finished, the dough should be smooth and elastic, with small air bubbles starting to form under the surface.
- Place the dough in a large, well oiled bowl. Coat all sides of the dough and cover loosely with plastic wrap. Let rise in a warm, draft-free place until doubled in bulk. About 1 1/2 hours.
- Grease two 9X5 inch loaf pans.* Punch down the dough. Then divide the dough in half. Shape into loaves, and place into the pans.
- Cover pans with a clean tea/hand towel and let rise until doubled in bulk, about 45 minutes. Place loaves in a cold oven and bake at 375 F for 35 minutes.
- Immediately transfer from pans onto a cooling rack. Let cool at least 1 hour before slicing. Makes 2 loaves.
*No shortening? Lightly oil and flour pans.
