My Wolfgang Puck bread maker keeps tripping the GFI switch when it goes into the baking mode. Is this an easy fix?

It sounds like you have the circuit over loaded and this will cause your issue. You need to see what else is plugged into your GFI switched and remove it when using your bread machine. If this is not helping at all try to plug the bread machine into another outlet. If you are still having an issue then there is a short in the machine that is causing this problem.
Sometimes one mode will use more power than another or if it only happens occasionally then it could be another 'item' on the same circuit kicks on at the same time and trips the GFI.
One of my daughters has a small place and her toaster oven and microwave are on the same circuit and if she forgets and tries to use both at the same time - off it goes.
Check everything that works off that circuit and either move one of the items to another circuit or maybe it is something you can leave unplugged and just plug it in when you use it as it would probably not be at the same time as you are making bread.
It's good that you have a GFI on this circuit.
