Diamond Post Medal for All Time! 1,298 Posts This is a healthy and delicious Yam and Shrimp Soup. You could eat this soup with bread or as an appetizer followed by a rice entree.
Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes
Yield: 4 people
Ingredients:
- 1/2 lb shrimp
- 2 yam
- 1/4 bunch cilantro
- 3 cloves garlic
- 4 stems green onion
- 2 Tbsp olive oil
- 3/4 gal water
- Dash of salt
- Dash of black pepper
- 1 Tbsp fish sauce
Steps:
- Wash green onions and cilantro then chop fine.
- Wash and peel shrimp. Mince to a paste. Add dash of salt/pepper and handful of onion tossed in. Note: I used extra large shrimp, but the option is yours.
- Peel the outer layer of the white yam skin and remove. Then shred.
- Peel garlic cloves and smash. In a pot, add olive oil and the smashed garlic cloves on high heat until garlic is golden brown.
- Then add water. Bring to a boil.
- When the water is boiling, add minced shrimp spoon by spoon (or depending how big you want your chunks of shrimp spoon the amount you want). After putting all your minced shrimp meatball, allow the pot to boil again.
- Once boiling, add the shredded yams in and fish sauce then cook for remaining 5 minutes.
- Ready to serve and garnish with remaining chopped cilantro and onion.
