Diamond Post Medal for All Time! 1,298 Posts It is yellow zucchini squash season. We harvested them from our backyard! This is an easy and refreshing soup with minimal ingredients and pairs great with rice.

Cook Time: 15-20 minutes
Total Time: 30-35 minutes
Yield: 4 people
Ingredients:
- 10 Large Shrimp
- Dash of salt/pepper
- 1 Tbsp Fish Sauce
- 1/4 Red onions
- 2 Yellow Zucchini Squash
- 2 cups Water
- Drizzle of Olive oil
Steps:
- Prep ingredients. Chop yellow zucchini squash in your desired size for soup. Peel and devein shrimp. Chop to a paste and season with dash of salt/pepper. Use any onion you may have and chop.
- In a sauce pan, I drizzle dash of olive oil and sauté onions. Then cooked shrimp for a few minutes.
- In a large pot - heat water and zucchini.
- Once boiled, combine shrimp/onion mixture. Add fish sauce (to your liking), stir and cook for a few more minutes. Cover lid for 5 minutes then ready to serve.
