Due to the virus, it will just be my husband and me for Thanksgiving. I purchased the smallest turkey breast I could find, but even that is too much. Both of us prefer the taste of turkey the first day. Since the meat was already frozen, the butcher at the store was unable to cut it.
I knew there would be a change in flavor, texture and quality if I completely thawed the meat, cut and refroze it.
However, meat that still has ice crystals in it can safely be refrozen. I thawed the meat until I could cut it with my kitchen shears and heavy duty knife. I wrapped each piece separately and then put in a freezer bag.
I then wrapped the carcass separately and will use it for soup. No waste, and no eating leftover turkey for days.
