Recently my female zebra finch laid eggs, but then died and the male is left to take care of them. One has hatched already, but the other two are still unhatched eggs. I'm wondering if the male will take care of the baby finches, if not should I be the one to take care of them? Or what should I do?

I would let nature take its course and let the male take care of them.
You have my condolences for the loss of your female finch. So sad.
In the wild, the both parents take care of babies so you could let nature take its course with the hatchling and the remaining eggs and just keep an eye on things. These birds do best with minimal human intervention so often times less is more.
That said, because I am such a huge animal lover and these are in captivity, I would be inclined to talk to a vet who specializes in finches and ask for guidance in the best way to care take care of the situation.
The vet may say to let nature take its course or they may offer guidance for alternatives. These are such nervous little birds that even the best intentions may still result in a poor outcome, but having professional guidance may give you the peace of mind you need for yourself.
