This is a meal in one dish. Very easy to prepare and it's gluten free.

Hi - sounds delicious - just wish everyone would put approximate number of servings when entering recipes. I can always tell they are more than I need and cut them down but not sure "newer" cooks always realize this.
Has anyone tried this yet? I have two questions...how is using white rice considered gluten free and it seems like 55 minutes at 400 degrees would dry the chicken out?

The number of servings will depend on how much you want to eat. It will serve 4-6 people depending on if you have something else to go with it. My husband and I make 2 meals out of it and it is good left over.
For this dish, I used 2 large chicken breast and cut them in half to make them thinner. I made it again the other day and cut the breast in strips like chicken tenders.
Rice is gluten free. Most everything I eat has rice flour in it. The rice is in the bottom of the dish and there is enough liquid in the dish that the rice is moist and the chicken is also moist. Cooking time would depend on how large the pieces of chicken are. You need to make sure the chicken is done.
