Zucchini Brownies

This is a very moist brownie and everyone who tries them, loves them

Ingredients:

  • 1 1/2 cups sugar
  • 1/2 cup butter or margarine
  • 2 eggs
  • Advertisement

  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 Tbsp. cocoa powder
  • 2 cups flour
  • 1 1/2 grated zucchini.

Topping:

  • 2 Tbsp. sugar
  • 6 oz. bag of chocolate chips
  • 1/2 cup walnuts, optional

Directions:

Cream together sugar and butter or margarine. Mix in eggs.

In separate bowl, mix together flour, baking soda, salt, cinnamon and cocoa. Add to sugar, butter and eggs mixture. Beat until combined. Add zucchini and mix well.

For the topping, mix together the sugar, chocolate chips and nuts (if using). Sprinkle evenly over the top.

Servings: 12
Prep Time: 10 Minutes
Cooking Time: 25-30 Minutes

I used a 10X10 inch pan. I put the chocolate chips on after it cooled for a bit and baked it in a 350 degree oven.

It sounds good however not much cocoa! Is the topping 'grainy'?

How much zucchini? 1 1/2 whole ones or 1 1/2 cups? I would think more cocoa.

I used 1-1/2 cups ground up zucchini. I too thought it did not seem chocolatey enough when I read the recipe but went by what it said and it seemed like enough chocolate to me. I am sure you could add another tablespoon of cocoa and have no negligible difference in the batter.

If it would make the batter too thick, add a tiny bit of water. No, the top is not grainy. One thing I might suggest, when you put the chocolate chips on the top, to get it to melt quickly so you can spread it, pop it in the oven at 350 F for about 30 seconds so they melt.
