Ingredients:
- 1 cup vegetable oil
- 1 cup honey
- 2 large eggs
- 1 cup shredded zucchini
- 1 cup shredded carrot
- 2 cups whole-wheat flour
- 2 tsp baking powder
- 1 tsp ground nutmeg
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 cup raisins
- 1 cup chopped walnuts
- 1-2 Tbsp frozen orange juice concentrate
Steps:
- Preheat oven to 350 degrees F.
- Cream together the vegetable oil, honey, and eggs until light and fluffy.
- Add the rest of the ingredients, except for the orange juice. Mix.
- Lightly grease (I use Pam) a 9x13 inch pan.
- Spread mixture evenly.
- Bake around 35 minutes.
- Cool and glaze with juice.

You could improve these by substituting applesauce for the oil. Nice and moist with extra fruit instead of fat and fewer calories.
