One of my favorite zucchini recipes and a great use of the garden abundance.
Savory fritters with a sour cream or yogurt dip is eating heaven!
Total Time: 20 minutes
Yield: 32 fritters
Ingredients:
- 2 cups grated zucchini (a mini processor makes it easy)
- 2 eggs, beaten
- 1/4 cup onion
- 1/2 cup flour
- 1/2 cup Parmesan
- 1/2 cup shredded mozzarella
- 2 Tbsp oil
- salt & pepper

Steps:
- Mix everything except the oil together into a batter.

- Heat oil on medium high.
- Drop full tablespoons of batter into the oil until the edges start to dry.

- Flip fritter and push down with spatula a bit, since they are moist and juicy.
- Remove them when golden brown. I place them on a paper towel for a little while to absorb any of the olive oil from the frying.
- You may serve them with sour cream or choose to use plain yogurt. I like to sprinkle dill weed or even garlic powder on the yogurt as well.
