Do you want a delicious, balanced and not expensive dish? Zucchini gratin is just such a dish. This is a fancy side dish out of everyday vegetables. There are many variations on cooking zucchini gratin. I am sharing my French friend's recipe.
Prep Time: 15 Minutes
Cook Time: 45 Minutes
Total Time: 1 Hour
Yield: 6
Supplies:
- 2 lb or 6 courgettes (zucchini)
- 1 egg
- 7 garlic cloves
- 150 g grated cheese (gruyere or parmesan)
- 2 Tbsp olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
Steps:
- Wash the zucchini, pat dry. Then cut them into slices.
- Finely chop the garlic cloves.
- Add 2 tablespoons olive oil to a large skillet, add the sliced zucchini.
- Add the chopped garlic.
- Sauté a bit, stirring.
- Reduce the heat to low, cover the pan and cook until tender. Try mashing one slice of zucchini to see if the zucchini is tender enough. When the zucchini slices are tender enough, turn off the heat.
- Preheat the oven to 350 degrees F. Grease a 1 1/2-quart baking dish.
- Remove the vegetables to a bowl.
- Mash the zucchini with a fork.
- Add egg and mix well. Salt and pepper.
- Turn the zucchini mass into the baking dish and sprinkle the shredded cheese over the zucchini.
- Bake the gratin in the preheated oven until the topping is browned.
