A great way to use up the bounty of zucchini.
Total Time: 10 min prep, 30-40 min baking, 10 min resting
Yield: 6-8 slices

Ingredients:
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated sharp Cheddar cheese
- 1/3 cup oil
- 1/2 small onion, diced
- 1 cup Bisquick
- 4 eggs, beaten
- 3-4 Tbsp parsley
- 3 cups sliced zucchini
Steps:
- Preheat oven to 350 degrees F. Grease a 9-inch pie plate.
- Combine all the ingredients.

- Put in the prepared dish.

- Bake 30-40 minutes, until the filling is bubbly and the top is brown.
- Let rest 10 minutes.
