This is our favorite recipe for zucchini. You can have it as a brunch item or as a light supper during the summer months.
Ingredients:
- 3 cups thinly sliced zucchini
- 1 cup Bisquick
- 1/2 cup chopped onion
- 1/2 cup grated Parmesan cheese
- 2 Tbsp. parsley
- 1/2 tsp. oregano
- 1/4 tsp. crushed garlic
- 1/2 cup Canola oil
- 4 eggs, slightly beaten
Directions:
Mix all ingredients. Spread in a 9/12 pan greased with margarine or sprayed with Pam. Bake at 350 degrees for 50 - 60 minutes or until golden brown. Enjoy.

I always thought quiche required swiss cheese? You only have grated in this recipe? Does it rise? Is the grated cheese enough?

Because of the Bisquick, I think this will come out more like a muffin consistency.
