I love the farmer's market in our little town but it is only open on Fridays. I purchased some green beans. As I was getting ready to leave, I saw some more green beans that looked even better so I bought them too.
Before I purchased them, I asked the farmer how long would they keep in the refrigerator. He told me if I put them in a paper bag, they would keep in the refrigerator for 5 days. I didn't have a paper bag so I used a piece of newspaper to wrap them.
I took them out on Tuesday. They looked good and were still crisp. I cooked them for dinner and they were just as good as fresh from the garden.
On my next trip to the farmers market, I stocked up on enough green beans to last a week. We love fresh home grown green beans.

What is the best way to store string beans?

If they're fresh, you can store them in a paper bag in the crisper drawer in your fridge. If you want to freeze them, break off both ends, blanche in hot water for about 2 minutes, put in plastic bags and then into the freezer.
I usually can string beans in the pressure canner but this year, with the dry weather, the string beans did not produce enough for me to can so I froze a few packages. This is the first year I have frozen string beans and I was really surprised at how well they tasted.
Besides canning you can dry string beans also. Using needle and strong thread run needle and thread through each string bean then hang in good place for drying. Leave hanging until ready to use.
