Chopping Onion

Ingredients:

  • 3 large onions, sliced
  • 1 Tbsp. butter or margarine
  • 2 Tbsp. flour
  • 1/2 tsp. garlic salt
  • 1/8 tsp. pepper
  • 1 1/4 cups milk
  • 1/2 cup (2 oz) shredded American Cheese

  • 2 medium potatoes peeled and sliced thinly
  • 1/4 cup (1 oz) shredded American Cheese

Directions:

In large saucepan cook onion in the butter using medium heat. Stir occasionally. Cook until tender, about 8 minutes. Stir the flour, garlic salt, and pepper into the cooked onion. Add milk all at once. Cook and stir until mixture thickens and is bubbly. Add 1/2 cup of cheese stirring until cheese has melted. Remove from heat. Place half of the sliced potatoes in a greased 1 1/2 quart casserole. Cover with half of the sauce. Repeat layers.

Bake covered in 350 degree F. oven for 35 minutes. Uncover casserole and bake 40 -45 minutes longer or until potatoes are tender.

Sprinkle with 1/4 cup cheese. Let stand for 5 minutes. Makes 4 servings.

Saute' onion in butter until crisp-tender. Arrange in a lightly greased 8 inch square baking dish. Combine eggs and next 3 ingredients; mix well.

Slice and separate onions. Add margarine and cook in microwave 6-8 minutes. Mix cream of chicken soup with milk and soy sauce. Mix with onions. Slice small French bread and butter on both sides.

A neighbor friend gave me a bag of red onions. I don't use red onions too often so I needed to find a recipe so that I wouldn't waste them. I found this recipe and tried it out. This recipe could also be used for white onions if you want a flavor that is less strong.
