m&m cookies 2Our daughter took these to school as a birthday treat. These cookies have the chewiness of a chocolate chip cookie and the fun colors of M&Ms.

Total Time: 1 hour

Yield: 30-40 cookies

Ingredients:

  • 2 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter (2 sticks), softened
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, firmly packed
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 cups M&Ms

Steps:

  1. Preheat oven to 375 degrees F.
  2. In a small bowl, combine flour, baking soda, and salt.
  3. add salt
     
  4. In a large bowl, combine butter, granulated sugar, brown sugar, and vanilla. Using a mixer, beat until smooth.

  6. Add eggs and beat until combined.

  8. Slowly add flour mixture to the butter mixture, mix well.

  10. Add M&Ms and gently fold them into the dough.

  12. Using a cookie scoop (or a Tbsp.) onto an ungreased cookie sheet.

  14. Bake for 9-11 minutes or until golden brown.

  16. Remove cookies from cookie sheet and cool completely on a wire rack. Enjoy!

It's been a while since I made cookies. I got hooked on this St. Patrick concept realizing that it's fun to make crafts and recipes with rainbow colors. I had fun creating this snack with my kid during the weekend.

Mix first 5 ingredients until well mixed, add remaining ingredients. Mix until well blended, drop by tsp onto cookie sheet bake at 350 degrees f for 10-12 minutes.

I am looking for a recipe which was on the back of a Christmas bag of M&M's several years ago. It used the green and red M&Ms and also candied cherries. I seem to remember using almond extract too. Anyone have this recipe?

MERRY CHERRY BARS
1 c. butter
1 c. granulated sugar
1 egg
1/2 tsp. almond extract
2 c. flour
1/4 tsp. salt
3/4 c. coarsely chopped red

candied cherries
1/3 c. coarsely chopped green
M&M's
1 c. sifted confectioners
sugar
5 tsp. warm water

Beat together butter and sugar until light and fluffy;
blend in egg and almond extract. Add combined flour and salt;
mix well. Stir in 1/2 cup cherries. Spread dough into greased
15 1/2 x 10 x 1/2-inch jelly roll pan. Sprinkle with remaining
1/4 cup cherries and candies; press in lightly. Bake at 300 degrees
for 30 to 35 minutes or until edges are very lightly browned.
Cool thoroughly. Combine confectioners sugar and water, mixing
until smooth. Drizzle over cherry candy topping; cut into bars
to serve.
Note: One 16 ounce package of M&M's plain candies
yields about 1/2 cup green M&M's.

Regarding the recipe I just posted, I notice some variations use 1/2 cup red & green M&Ms instead of 1/3 cup of green ones.
