This is a nice twist on the usual guacamole. You grill the avocados before you add them to the rest of the ingredients. The result is a guacamole with a lovely, deep smokey flavour. You can grill your avocados on your outdoor grill or indoor grill pan. I used the grill portion of a panini press.

Total Time: 25 minutes
Yield: 6-8 servings
Ingredients:
4 avocados
1/2 onion, finely chopped
1 roma tomato, finely chopped
1/2 jalapeno, finely chopped
2 cloves garlic, minced
1/2 tsp ground cumin
1 fresh lime, juiced
1 Tbsp olive oil, plus more for brushing
salt and pepper to taste
Steps:
In a bowl, mix together onions, tomato, jalapeno, garlic, cumin, lime juice and 1 tablespoon olive oil. Let sit for at least 15 minutes.
Halve each avocado. Give the pit a gentle whack with your knife, twist, and pull out the pit. Repeat.

Preheat grill to 400 F. Coat flesh of avocado halves with some olive oil.
Place avocados flesh-side down on grill for about 5 minutes.
Avocados are ready when you can see the grill marks. Remove from heat. Allow them to cool or use a towel/gloves to handle for the next step. They will be hot.
Scoop out flesh of avocados with a big spoon and transfer the bowl of veggies. Smash with a fork. Add salt and pepper to taste.
It wasn't until recently that I tried cilantro in my guacamole recipe but after checking out other people's recipes for it I was not disappointed with that added flavor.

Guacamole is everything to me! I love avocados. You can use guacamole with so many foods; sandwiches, burgers, tacos, chips, salad, vegetables, crackers, eggs, etc.
