Pecan Marshmallow Log

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 cups flour
  • 1 cup boiling water
  • 2 tsp. vanilla
  • peanuts, crushed or ground

Directions

Beat eggs until fluffy, add sugar gradually. Add water, vanilla, then dry ingredients.

Bake in sheet pan. When cool, cut into squares and spread with the following.

  • 1 lb. Powdered sugar
  • 1 stick oleo (margarine)
  • milk (add a few tablespoons at a time until desired thickness)

This won't be very thick. Ice squares one at a time and roll in crushed or ground peanuts. It is helpful if you have a helper to do this!

Cook sugar, brown sugar, syrup and milk to soft ball stage. Cool at room temperature until lukewarm. Beat until mixture holds it's shape. Knead until firm.

Mix the first 3 ingredients until crumbly. Pat into 9x13 inch pan. Bake at 350 degrees F for 15 minutes. Remove from oven. Put 3 cup mini marshmallows on top.

Scald milk. Cool to safe temperature for yeast. In a separate pot, melt shortening. Beat eggs. Dissolve yeast in the warm milk. Add shortening and beaten eggs. Add flour, 2 cups at a time.

Here is recipe that is simialr to the nut roll, it is a poppyseed roll which my polish aunt made, thought you might like to try it.
2 Hour Poppyseed Roll

Combine:
3 cups flour
1/2 teaspoon salt
1 1/2 tablespoon sugar
1/4 pound butter
2 eggs
1/2 cup sour cream

Mix well

Divide dough into 3 portions.
Roll thin.
Spread poppy Seed filling.
Place on greased baking sheet.
Allow to rise i hour.

Bake at 350F.. 35-40 minutes.

I use prepared Poppy Seed filling,
but you can make your own.
