Idk what I did wrong but my roast has been in the oven at 250 for 5 hours, its rubbery, not done and its actually only half a roast. I like to cut my roasts in half and freeze since I only cook for two. Either i did something wrong or this does not realistically...

This did not work for me at all. After 4 hours it was still raw and rubbery
