Freezing Unblanched Vegetables?
I always freeze it right after its grated. I freeze in 1/2 cup baggies and add it to everything from tacos to breads. If I had to blanch it it would probably rot! Same with the yellow summer squash.
Substituting Yellow Squash for Zucchini?
I use it in place of zucchini, and another thrifty way to use yelllow squash is grate and freeze it in 1/2 cup portions. I add it to casseroles, taco meat, soups, bread, and so on. Great filler
