Any juices from canned fruit, I always use in place of water when making cakes. Boxed mixes or otherwise. I also buy cans of nectar and use that also in place of water. What a difference it makes. Also gives cakes a great texture.

Actually, rhubarb is not like something such as celery. It should not have a crunch to it. The full flavor comes out when it cooked thoroughly. Hope that helps. Wayne
