If it hasnt been cut open, cantaloupe will store for over a week in a fridge. You can tell when it goes bad because it will get mold in it, or it will get really squishy. Once you cut open a cantaloupe or slice it up it will keep for 2 or 3 days max.
Freezing Peppers?
Absolutely! I would recommend cutting them up first, then freezing. The texture will be a little different after freezing, but you wont be able to tell if you cook them. They wont be much good for eating raw after being frozen, though.
