The first thing is to only use stainless steel knives when cutting anything that would brown. Using any kind of lemon juice (bottle or fresh) dampen a napkin with juice and wipe your blade before starting and a couple more time through the cut process.
keep a paper towel in the bag or covered bowl that you store lettuce in.
