Put the first set of ingredients in a mixing bowl and make a well in the center. Don't mix them up yet, they will be more tender if you keep the mixing to a minimum. Put the second set of ingredients in the well and let the liquids soak into the bread crumbs. Now mix it all up with a spoon, using your hands only at the end, to make sure it is mixed thoroughly. Using a tablespoon at a time, form into balls. Handle as briefly as possible. I use a meatball maker that makes 6 at a time, very handly. On medium high heat brown on all sides. Reduce heat and cook through, or finish cooking in a sauce, soup, or stew.
