Ginger is very good for soothing the tummy and is an effective treatment for motion sickness. It will keep for at least 2 weeks in the fridge, but you can freeze it in an ice cube tray and then bag the cubes. Thaw as needed.
Mince the ginger in a food processor. Mix with the water, bring to a boil, and simmer, uncovered, for 10 minutes. Cover and let stand overnight (off the heat). Strain the mixture through doubled cheesecloth, squeezing to get all the liquid out. Throw the solids away. Mix the juice with the sugar, bring to a boil, and simmer over medium heat until reduced to 2 cups, about 15 minutes.
