Drain vegetables thoroughly. Soften gelatin in 1/4 cup cold water in medium bowl. Add 1/4 cup boiling water, stirring until dissolved. Stir vegetables into gelatin. Add mayonnaise, stirring to mix. Chill in airtight container overnight. Serve as spread on bread or crackers.

This really shouldn't be listed under vegetarian sandwiches...one of the ingredients, gelatin, is made from animal by-products. Other than that, it sounds like a good sandwich.
