Quick Potato Salad, From Leftover Mashed Potatoes

Got some leftover mashed potatoes in the fridge? Add one raw egg per serving, stir it up, and microwave about 1:20 per egg (the time will depend on your microwave - stir at least once per minute of cook time).

I MAKE SCRAMBLED EGGS WITH MASHED POTATOES, RICE OR WHAT EVER VEGGIE I HAVE IN FRIGDE. TODAY I HAD COUSCOUS AND PEAS IN SCRAMBLED EGGS. I AM TIRED OF HAVING FOOD GO BAD SO I TRY DIFFERENT THINGS. IT TASTES GOOD.
