Baking Soda is called Bicarbonate of Soda
in the U.K.

A very simple meatloaf recipe is ground beef, chopped onion, a little ketchup, some bread crumbs, an egg, salt, pepper. Mix up, bake, when almost done put a mixture of ketchup & mustard on top. Maybe sneak in a little brown sugar into the sauce.

But here's my FAVORITE MEATLOAF RECIPE OF ALL TIME:

Apple Meatloaf

(This makes 2 large meat loaves. Bake them both and freeze one.)

2-1/2 pounds ground beef

1-1/2 c. pepperidge farm herb stuffing mix (nut cubes)
1 granny smith apple, peeled, cored & diced
3 eggs
salt & pepper to taste
2-3 T horseradish sauce
1 onion, finely chopped
3/4 c ketchup

Preheat oven to 350.

Mix all ingredients together in large bowl. Shape into 2 loaves. Bake 1-1/2 hours or until cooked through.

Let rest 10-15 min. before slicing.

Topping: This is a glaze that goes on 15 minutes before meatloaf is done, then poured in a "stripe" over the portioned meat loaf slices.

1 large can frozen condensed apple juice.
1/2 c. chicken stock
1/2 c. ketchup
2-3 tsp. Asian 5-spice powder.

Reduce the juice, stock and ketchup down to glaze consistency, add the 5-spice powder and cook for a few minutes.

Sorry can't help with the meatloaf as I'm a vegetarian but I believe what is called 'Baking Soda' in the US is what is called 'Sodium Bicarbonate' in the UK, though the name is often shortened to 'Bicarb'. You can buy it in chemists and also in supermarkets and food stores where it is sometimes but not always in the 'baking' section along with flour etc.

This is my favorite Meatloaf Recipe:
SLOW-COOKED MEATLOAF

1 egg
1/4 cup milk
2 slices day-old bread, cubed
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper

1 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds lean ground beef
1/4 cup ketchup
Parsley (optional)

(optional)
8 medium carrots, cut into 1-inch chunks
8 small red potatoes

In a bowl, beat egg and milk. Stir in the bread cubes, onion, green pepper, salt and pepper. Add the beef and mix well. Shape into a round loaf (or whatever shape your crockpot is, I have one that is oval). Place in a 5-qt. slow cooker. If you are adding the vegtables, arrange the carrots around the loaf. Peel a strip around the center of each potato; place potatoes over carrots.
Cover and cook on high for 1 hour. Reduce heat to low: cover and cook 7-8 hours longer or until meat is no longer pink and the vegetables are tender.
You have to drain the grease at least once maybe twice. If you are pushed for time, you can cook on continious high for 3-4 hours. On the last hour spread ketchup on top of the loaf, then sprinkle parsley over the top to suit your taste.
