I want to make good oven chips for the grandchildren instead of buying them. Can anyone help? I have tried making them, but they turn out very dry when cooked. Many thanks.

We call them french fries but I know what you mean. I make "oven fries" by just cutting a potato into wedges or batons, about 6-8 from an average potato. I don't even peel them. Drizzle sparingly with oil and toss, season with salt & pepper. Bake at 400F (don't know gas mark equivalent) for 20-30 minutes turning the potatoes every 10 minutes till browned. It takes a bit of time but they are good. Not the same as deep fried potatoes but healthier. Hope that helps.
We make chips all the time in the oven its real easy and fun. if your talking about chips, then cut the potato in thin slices, the thinner they are the dryer they get faster, same as french fries. using any kind of oil, grease a pan. its good to take some oil of butter works best for met and with a plastic bag or wax paper play with the potatoes, getting butter all over them. this helps them crisp real nice! bake in oven on 400 F bake until golden! enjoy.
If your making chips, add salt for flavor or even pick up popcorn flavors at your local grocery store for taste.
Oven-fried Potato Chips Recipe
4 russet (baking) potatoes, peeled and sliced diagonally 1/8 inch thick
1/2 stick (1/4 cup) of butter, melted
Coarse salt to taste
Method
Pat the potatoes dry between paper towels and arrange them in one layer in 2 buttered cookie sheets pans. Brush the potatoes with the butter, bake them in a preheated 500°F oven for 15 to 20 minutes, or until the edges are golden brown. Sprinkle them with the salt.
Serves 4.
