Trim excess fat from steak; slice steak diagonally across grain into 1/4-inch-thick strips.
Combine soy sauce and remaining ingredients in a glass dish; add steak strips, and toss to coat. Cover and marinate in refrigerator 1 1/2 to 2 hours.
Remove steak strips from marinade, reserving marinade.Thread steak strips onto prepared skewers.
Grill, uncovered over medium-hot coals (350 to 400 degrees F / 175 to 205 degrees C) 8 to 9 minutes or until desired doneness, turning and basting frequently with reserved marinade. Discard any remaining marinade.

This sounds so yummy, Jodi, but a word of caution for you to know when using marinade that raw meats have been in though! I recently submitted a tip about how the marinade needs to be boiled in a small saucepan until it reaches 165 degrees to insure all food borne bacteria has been killed for health safety sake before basting.
P.S. I do plan to try this great sounding recipe. :-)
