Preheat oven to 375 degrees F. In a large bowl, combine first 7 ingredients and mix till smooth. Fold in grated squash.
Drop mixture, 1 Tbsp. at a time on to a greased baking sheet. Bake for 10 minutes or till browned. Remove to wire rack to cool.
We had an abundance of yellow squash one year. I adapted a carrot cookie recipe into this one. I took these to a potluck, everyone raved over them. The carrot cookie recipe said they had 40 calories per cookie, the squash probably has less.

These cookies are delicious...in fact, my family enjoyed them so much that they finished the first batch before the second was done baking! I was thrilled to find a sweet treat that uses so little sugar yet still appeals to everyone. Thank you!
Followed the recipe to the letter making these cookies. I had high hopes that they would be good and great way to use up some squash. Smelled good while baking.
These were REALLY good!! I squeezed my grated squash before putting into the batter and I added a little cinnamon. After they were baked, I drizzled some raw honey on them. I also split up the 3/4 cup flour between 1/4 cup whole wheat, spelt, and rice flours. Definitely a keeper! Thank you.
