How do I prevent the brown discoloration of freshly-squeezed apple juice?

It is an oxidation process - you might try using Fruit Fresh which should help. It is a powedered product that has citric acid in it and helps slow down oxidation. It is close to flavorless, may have a hint of tartness in it. I use it on fresh cut fruit to keep it from turning, I would think it would work on fresh juice as well.

Add some lemon and mix well. Fresh apple juice should be drunk immediately for highest nutritional value.
