Pretty and tasty!
Bake beets in the oven, in foil. Take them out, rinse under cold water, and peel away outer skin. Chop into small pieces. Put in a dutch oven on top of the stove with oil and garlic. Cook on medium heat to blend the flavors together
cook spaghetti, drain, and rinse. Slowly add to the beets, turning and blending the pasta until it is completely covered. All of it should turn a beautiful magenta color!
This is great served warm but wow is it good cold the next day!

I love beets and I love pasta and this recipe sounds interesting and unique enough to try but (because ingredients are expensive if there is a boo boo and it doesn't turn out) could you answer a couple of questions for me before I try it?
1. For the garlic, are you speaking of salt, powder or minced?
2. For the oil, how many teaspoons or tablespoons? Oh, and what kind of oil do you use?
