This chicken salad is great! I especially love to top it with potato chips.
Ingredients:
- 3 hard boiled eggs, chopped
- 2 cups chicken, cooked and diced
- 3 cups rice, cooked
- 2 cans cream of chicken soup
- 3/4 cup mayonnaise
- 1 Tbsp. lemon juice
- 1/2 cup slivered almonds
- 1 cup celery, chopped
- 2 Tbsp. onion, diced
- 3/4 cup cheddar cheese, shredded
Directions:
Mix all ingredients. Place in a greased baking dish. Top with crushed Rice Krispies, potato chips or Chinese noodles. Bake at 350 degrees F for 40 minutes.
