Add flavored boullion or spices to rice while cooking, to give it a different flavor. I've even added soups like vegetable for a great side dish.

I am doing that right now. It always comes out great. Beef flavor, chicken flavor...even shrimp!
A dish I like is plain white rice added to warm applesauce, makes a great breakfast or cold with whipped topping for dessert.
I also toast the rice in a little oil before cooking, add a smidge of seasoning and then cook. Makes it take on a new genre than just plain old rice.
we cook rice with coconut milk added and flavor wth freash herbs
