Heat oil in a large skillet over medium heat. Add spinach and cook, tossing often, until just wilted, about 2 to 3 minutes. Stir in tomatoes and vinegar, season with salt and pepper and serve.

I like any salad or side dish that has spinach in it. I'll definitely be making this.

Thanks for reminding me of this. I make it with the following additions: sliced raw mushrooms (the white ones), sliced sweet red onion, and about 1/4 teaspoon dijon mustard mixed with the vinegar and oil. Yum yum!
