This cornbread is very moist, and the broccoli gives it a very unique flavor. One piece will not be enough!
Ingredients:
- 5 eggs, beaten
- 2 cups shredded cheddar cheese (or cottage)
- 1 small pkg. chopped broccoli
- 1 medium onion, diced
- 1 1/2 sticks margarine (12 Tbsp.)
- 2 boxes Jiffy cornbread mix
Directions:
Mix all ingredients together. If you use shredded cheese, you will need to add some water to the mixture. Pour into greased baking dish or 13x9 inch pan. Cook at 400 degrees F for 40 minutes. Mixture may stick, so cut it before you take it out of the pan.

This is a really tasty cornbread. Try mixing in one small, minced hot pepper (your choice) into the mix before baking. Really adds a little punch to it....
