I am looking for a Cottage Potato Recipe. My Aunt used to make one that had potatoes, green peppers, cheese and bread crumbs. I keep finding recipes with cottage cheese but I don't believe that it had cottage cheese in it.

I have that recipe.
I used 3 cans of potatoes, diced
1/2 lb. of velveeta cheese
Diced green pepper
Can of diced pimentoes
Tablespoon of dried onion flakes
Tablespoon of dried parsley
Stick of Margerine, melted
3 slices of bread diced
Mix all ingredients together and put in casserole dish. Add milk so that you can see it. Crush a small box of corn flakes and put over the top. Bake at 350 deg. for about 30-45 min.
I just called my Mom last night to get this recipe. I haven't had it in 20 years.
She didn't have any amounts, but she said to dice and boil the potatoes, saute diced green pepper and onions. Mix with potatoes and a small jar of pimentos, a couple of handfuls of croutons and shredded Velveeta cheese. Put in a casarole dish and pour a stick of melted butter on top. Cover and bake at 350 for 45 minutes.

Cottage Potatoes
10-12 potatoes (small to medium sized...works well with Yukon Gold or Red)
1 green pepper, chopped
1 med. onion, chopped
1/2 lb. Velveeta Cheese, cubed
2 cups Cheese and Garlic (or cheese and onion) croutons
1/2 lb. butter (yeah, that is right!)
1/2 cup milk
Boil potatoes; cool, peel and cube.
In a large bowl, mix potatoes, onion, green pepper, cheese and croutons. Season to taste with salt/pepper.
Put mixture in 9x13" pan. If making the night before, stop here.
Pour 1/2 lb. melted butter over mixture, then 1/2 cup milk.
Bake at 350 for 35-40 minutes.

Combine first 8 ingredients in 9x9 inch baking pan. Mix butter and milk; pour over potato mixture. Sprinkle with cornflakes. Bake 30 minutes at 400 degrees F. 6 servings.
