When baking or sauteing fish, try this cheap and healthy recipe.
Place last 4 ingredients in blender or food processor until minced. Wash a dry fish fillets and then apply veggie mixture. Heat skillet with butter and lay veggie coated fillets onto med hot skillet. Cook until veggies begin to caramelize (2-4 min). Coat remaining side of fish while in skillet and flip over.
Cooking it this way keeps the fish moist while adding healthy flavor. This can also be used in roasts!
