In a bowl dissolve the gelatin in the hot water. Add the sugar and lemon juice. Mix well and chill until slightly congealed. Beat the chilled milk at high speed until very fluffy, adding the salt while beating. Slowly fold the milk into the highly congealed gelatin until well mixed. Line a 9x13 inch pan with the vanilla wafers. Turn the gelatin mixture into the pan over the wafer crumbs, and chill thoroughly. Serves 12

We were just talking about this today! My mom uses crushed graham cracker crumbs instead of vanilla wafers for a super light dessert in the summer. Wonderful!
I made a very easy lemon pie. I made up a box of lemon pudding according to box directions then folded in a small container of whipped topping and poured in a graham cracker crust. Couldn't be any easier and the lemon flavor was so good.
