Years ago, I made a butterscotch pie using powdered coffee creamer from a recipe on the back of a powdered coffee creamer jar. Does anyone have this recipe? Thanks.

I do not have the recipe u are looking for but...
U can use any of the new liquid coffee creamers flavors u like and substitute the milk in the pie recipe for it.

Many years ago after my husband and I got married I made a butterscotch pie using Giant food markets brand coffee creamer. He really liked it however I lost the recipe in a house fire. I do remember I made the filling in a double boiler..

Butterscotch Pie w/Creamer
3/4 Cup Brown Sugar
4 Tablespoons Corn Starch
In top of double boiler, combine brown sugar, corn starch,creamer & salt. Add boiling water, cook in double boiler stirring constantly until thickened. Remove from heat. Beat egg yolks with 1 tablespoon of water beat into hot mixture and continue cooking, stirring constantly for about 5 minutes. Remove from heat and add butter and vanilla. Cool and pour into baked pie shell.
Beat egg whites until foamy, gradually beat in granulated sugar and continue beating until stiff peaks form. Spread over filling in pie shell. Bake in hot over 400 degrees F util meringue is golden brown.
