CUCUMBER SALAD
2 cucumbers, peeled and thinly sliced
1 pint cherry tomatoes or grape tomatoes, halved
1 small green bell pepper, chopped
1/2 cup green onions, chopped
1/3 cup vegetable oil
1/4 cup balsamic vinegar
2 tbls capers
Dried Italian dressing seasoning to taste
Toss cucumbers, tomatoes, bell pepper and onion in medium bowl.
Whisk together oil, vinegar, capers and Italian seasoning in small bowl.
Pour dressing over salad mixture and toss to coat.
And here's a yummy dressing to drizzle over sliced cucumbers:
TOMATO VINAIGRETTE
This is a great way to use up extra cherry tomatoes.
Ingredients:
1/2 cup whole cherry tomatoes
1 /4 cup red wine or balsamic vinegar
1/8 tsp garlic powder
1 tsp Dijon mustard
3/4 cup extra virgin olive oil
Salt and pepper
Directions:
Combine cherry tomatoes, vinegar, garlic and Dijon mustard in a food processor and process until well blended. With food processor is still on, slowly pour in olive oil until mixture is blended. Season the mixture with salt and pepper to taste and transfer to a serving vessel.

CUCUMBER AND FETA SALAD
Ingredients:
2 cucumbers
1 tsp minced garlic
1 tsp Dijon mustard
1 tsp honey
1 tbsp red wine vinegar
2 tbsp extra virgin olive oil
2 cucumbers, peeled and seeded
8 oz feta flavor of your choice, crumbled
Salt and pepper to taste
Directions:
Place garlic, Dijon, honey, vinegar and oil in a cruet or lidded jar, shake and refrigerate.
*They would also be good diced in just about any cold pasta salad.
*You can also Google for 'Freezer Dills' recipes. ;-)
Did you mean for a quick salad or for preserving them? I peel and slice them then add some ranch dressing and let them sit for awhile. That is how we like them.
Our local Oriental restaurant makes cucumber Kim-Chee, very delicious! There are several recipes online, just pick whichever one is easiest.
Cucumbers and Onions
1 large cucumber; peeled, sliced
1 small onion; thin sliced, separated in rings
1/4 C. vinegar
2 Tbsp. sugar
Stir the vinegar and sugar together until sugar is dissolved.
Here is one I made last year that I thought was good.
1/3 c. water
1/3 c. oil
1/3 c. sugar
1/3 c. vinegar
3 cukes, sliced
3 tomatoes chopped, or several cherry tomatoes cut in half
1 onion diced
Dash of garlic powder
Marinate at least 1 hour before serving.
You can slice & peel them and add onions, then pour a bottle of Itailian dressing over them and let set for several hours.
