Yes, you can. My grandmother's vegetable soup includes cabbage and for as long as I can remember, she canned it every year.

You need to use a pressure cooker to can soups and other non-acidic foods or there is a risk of botulism. Here is some good information about home canning from the USDA:

i would like to know how long I need to pressure cook a soup that has ham, cabbage, potatoes, carrots and celery.

I always add cabbage to my veggie soup even when I make my WW version without any meat. It really adds a lot to it. If I don't have a head of cabbage I just buy a small bag of shredded cabbage (cole slaw) and add some of that.

If they didn't explode during the canning process, they must not have been sealed correctly and burst due to bacteria growing in the soup. For soup and low acid canning, a stovetop pressure cooker must be used. A water bath will not work unless the food is very acidic.
