What is linguica?
Editor's Note Linguica is a form of Portuguese cured pork sausage seasoned with onions, garlic, and paprika.
I have made Linguisa and cheese quesadillas. Slice Linguisa thin and brown in a frying pan. Drain and set aside on a paper towel to drain off more of the fat. Spray another fry pan with thin coat of cooking spray, place tortilla in bottom then layer mozzarella and then Monterrey Jack cheese on tortilla. Place sliced Linguisa over top of cheeses, I add sliced green onions, sliced black olives. Cover with second tortilla and flip over to brown both sides!
I don't have a recipe for Quesadillas but this can be used as a finger food for pot lucks etc. It uses linguica and cheese.
