Julie's Chicken Parmesan

This is an easy, measurement free dish that everyone loves!

Ingredients:

  • 8 oz. Pasta
  • 1 lb. skinless chicken breasts - halved
  • salt and pepper
  • 2 egg whites
  • bread crumbs
  • 1 Tbsp. olive oil
  • pasta sauce
  • 1/2 cup mozzarella cheese (grated)

Preheat oven to 375 degrees F. Pound chicken breasts between plastic wrap with the flat side of a meat tenderizer until smooth. Place egg whites into a shallow bowl with salt and pepper thrown in. Put about 1/2 cup of bread crumbs into another shallow dish.

Dip the chicken breasts into the egg whites and then roll them in bread crumbs. Add more crumbs if the dish gets too low. Place the breaded chicken breasts in a skillet with the tablespoon of olive oil. Saute in oil for 3-4 minutes on each side (Or for a more healthy option, bake in 350 degree F oven for 10-12 minutes).

Pour a thin layer of pasta sauce (homemade or store bought) into a 9x13in dish. Add breaded breasts and another layer of sauce. Sprinkle with mozzarella cheese. Bake in 375 degree F oven for 5-10 minutes. While baking, prepare pasta (angel hair, spaghetti, etc) and set aside. Serve immediately with pasta. Enjoy!
